Well, it's been an awfully long time since I've posted on here. I've finished my second to last year of school, started my last year (YAY!), worked as an Intern at Boeing, and gotten my new ACL! So I'm finally off crutches and out of my brace and I think it's time for me to start eating well again and to start exercising! So I'm going to start this again. Except I'm going to use it as like a meal diary thingy. Not like I did before, anyways. I started this project where I am sorting my recipes (since I have roughly 50 cookbooks) by season (and then eventually by main ingredient(s)) so I can cook healthier (since cooking in season is better, and not to mention cheaper!) and actually try all my recipes. I've only tried probably less than 2% of all my recipes.
In here, I'm going to write what I had for each meal, like usual, except I'm going to also write my comments about the stuff I made, what book its from, pages numbers, time it took and cost also. I'll also add if I made any changes and what happened (oh goodness, I sound like a chemist!). I wish my camera worked, but it eats batteries like a monster so there won't be any pictures for a while. Hmmmm.. maybe that's what I should ask for christmas....

Since I probably won't remember most of the other days, I'm just going to start with today. Maybe another night when I don't have a midterm the next day and two homework sets I'll go back through the recipes I've cooked and added my comments. Maybe.
So for today:
Breakfast: Cranberry Muffins from Better Homes and Gardens Cookbook, page 115. Gotten these down pretty good so only about 30 min total. Rough cost = (4.99 bag cranberries * (used 1/3 of bag) / 12 muffins = 14 cents per muffin (flour, sugar, milk, eggs, etc... negligible since bought in large quantities and I don't remember the price.. oh goodness now I really sound like a chemist!) I increased the flour from 1.75 cups to 2 cups. Seems to make them rise better and be fluffier. Also had an apple juice box.
Snack: none
Lunch: Cup o Noodles and a Pear
Snack: Piroutte stick thingys. My grandma gave me a box and I'm addicted. I ate like 5 in one sitting. And a homemade Pumpkin Spice Latte, which was more like a Cinnamon Spice Latte since I don't have ground cloves and my mom still has my nutmeg.
Dinner: Rosemary Thyme Lamb with Parmesan Roasted Broccoli and Cauliflower. Veggies from Barefoot Contessa at Home, p 146. For lamb, rubbed with dried rosemary, thyme, salt and pepper, then "grilled" in my cast iron grill pan (that I love to cook in, but hate to clean!). Total time about 45 min (thermometer wasn't working right, showed temp at 140F, then 110F). Could have been closer to 30 if thermometer worked. Total cost = ((4.06 for lamb)+(1.53 for cauliflower) +(0 broccoli (free from my grandma))/2 = $2.80 per serving. Parmesan cheese negligible because off large block and cannot measure exact amount. The recipe for veggies only called for cauliflower but I though broccoli would be good too. It tasted really good, but the broccoli didn't look to good. So if you don't care about looks, add the broccoli for color, but if want it to look good, add your color elsewhere.
Dessert: 1/2 pomegranate and a s'more!
Exercise: Cleaning. I got a new vacuum so I was cleaning lots today! And I did about 6 loads of laundry :)
Now that I think about it, a good thing to add would be a Yum factor, rated by both me and Tim. Hmmm.... I'll add that later. Ok adding it now.
Muffins:
Me - 4/5, forgot to add the extra 2 tbsp sugar, so a little sour. would have been better with orange zest.
Tim - 4.5/5, yummy, good texture, great taste, good size, sometimes cranberries a little too tart
Lamb:
Me - 3/5, good flavor, tender, a little chewy in spots
Tim - 3.8/5 - good texture, but didn't like the rosemary
Cauliflower and Broccoli:
Me - 4/5, yummy, very yummy but would have just done only cauliflower for first 10 min in oven, then added broccoli so the broccoli didn't look so yucky.
Tim - 4.8/5, delicious, tasty, good texture

Forgetful
Argh I keep forgetting to do this thing. It's so hard since I don't get on the computer late at night since it keeps me up.
But I'm trying to get in better shape and destress and eat healthier. And it's kinda happening.
So I will only do Saturday, Sunday and today since those are the only ones that I remember.
Saturday 16 May 2009:
Breakfast: Banana and Honey Nut O's with Vanilla Almond Milk.
Snack: Chips and Salsa.
Lunch: Raisin Cinnamon English Muffin, toasted with butter and a can of Spaghettios. My grandma bought me some so I had to have them!
Snack: None
Dinner: Steak, Tomato, Bell Pepper and Onion Kebabs with Grilled Sweet Potatoes and Corn. It was really good.
Dessert: Apple Muffins. My dad bought a huge bag of fruit and ate all but the apples. So I used three of them and made muffins!
Exercise: Mowing my grandparents' and my parents' lawns.

Lunch: Leftovers from dinner.
Snack: None
Dinner: Pizza from Fondis. It was really good. It had mushrooms and sausage and pepperoni and was thin crust and not much cheese and onions. Yum.
Dessert: Chocolate Almond Milk.
Exercise: None.
Monday 18 May 2009:
Breakfast: Croissant with Grape Jelly, Orange Peach Juice and a Banana
Snack: Half a snack pack of Gardettos Cracker Mix.
Lunch: Penne with Marinara and Sausage, Green Salad, Garlic Bread. I shouldn't have eaten it all, but I did. :(
Snack: None.
Dinner: Sloppy Joes with Corn and Sweet Potatoes. It was pretty good. Good home cookin'. Ate too much though.
Dessert: (yet to be had) A few bites of a chocolate cake I bought from the store.
Exercise: 30 minutes elliptical, knee exercises.
Alright. That's all. Gotta try to study. Ugh.

Long Time
Ugh. Life got crazy.
I had so much to do and then I forgot about trying to get healthy. And now I'm sick with a cold (maybe). I have some of the symptoms (low energy, upset stomach) but no runny nose. Weird.
Anywho. My diet has been really bad lately. Lots of chicken strips (just can't get enough of them!) and cup o noodles. Not as much fruit and veggies as I would like.
Oh well. So I'm starting over.
With yesterday.
Monday May 11, 2009:
Breakfast: Cherry Pomegranate Toaster Pastry and a cup of chocolate almond milk. Not my choice. Tim couldn't finish both of the pastries of them so I finished one for him. But the almond milk was my choice. It's my favorite drink right now.
Snack: Don't think I had one.
Lunch: Chef Salad minus the egg and bacon. And with fat-free ranch. And with sunflower seeds. It was yummy. Oh and with grapefruit juice.
Snack: Kit Kat bar on my way to physical therapy.
Dinner: Chicken Piccata and green salad with olive oil and balsamic vinegar. It was very delicious. Although I think it made my tummy upset because of the egg in the recipe.
Dessert: More chocolate milk. Yum.
Workout: 10 min stationary bike, then my knee exercises. My knee hurts today now.
Ok. That's all.

Sleepy
It's late for me. I decided to spend the night at Tim's place because I was lazy and didn't want to move.
So he is playing a game and I am on his laptop. I sleepy.
Anywho. I need to list my stuff for Friday and Saturday, and I guess today since it's pretty much over with.
Friday 1 May 2009:
Breakfast: Serving of fruit and 2 mini muffins
Snack: Can't remember. I need to do this sooner. Oh yeah, I got my snack out of the vending machine. I was going for a butterfinger crisp bar, but I got a Nutrigrain bar instead.
Lunch: Cup of Noodles. Tim's specialty.
Snack: Chips and Salsa. Yum.
Dinner: Wow deja vu! Ok I wasn't imagining things. So we had raviolis with tomato sauce and chicken and apple sausage. It was yummy.
Dessert: Ice Cream. What else.
Exercise: Almost none. Tried to do my knee exercises but my knee hurt.
Saturday 2 May 2009:
Breakfast: Last of the mini muffins and a banana
Snack: Cookies and Jelly Beans. I went to my grandparents house. They always have good stuff there.
Lunch: Tuna fish sandwich with the wrong kind of pickles. My mom got the dill chips instead of the sweet chips. It was still good, just not how I like it.
Snack: Chicken Nuggets. They are so yummy.
Dinner: Spanish Birds and rice. For those who don't know, I have no clue why they are named what they are named, but they are carrots, celery, bacon and pickles wrapped inside a slice of thin beef with a horseradish sauce. They are very good. My mom makes them very well.
Dessert: Strawberry shortcakes. 3 of them. I just can't get enough of them.
Exercise: Was supposed to be mowing my grandparent's lawn, but then it started to rain. So pretty much nothing.
Sunday 3 May 2009:
Breakfast: Raisin, Date and Walnut Oatmeal with a banana.
Snack: None.
Lunch: BLT Sandwich. My favorite.
Snack: Almonds.
Dinner: Penne with Wilted Baby Greens and Chicken. Recipe from Seasons. I added in the chicken because Tim will only eat things with meat. It was very good.
Dessert: Reeses Smores. It's a regular smore with a reeses peanut butter cup in there too. Its so good.
Exercise: Mowing my grandparents' lawn. Not much, but oh well.
Ok. Time for me to go to sleep.

Crazy Week
Wow this has been a crazy week. Dropped a class, forgot a bunch of lab stuff, has physical therapy, went to my boyfriend's softball games, had a doctors appointment to get a form filled out for employment.
That doctors appointment pretty much took up 4 unnecessary hours of my day. Traffic was so bad on the way back that I completely missed another thing I was supposed to be doing.
Anyways. I should probably try and remember my workout stuff and meals for this week.
Wednesday, 29 April 2009:
Workout: 30 min elliptical, some leg exercises, walking
Breakfast: 1 small serving of fruit and 2 mini muffins, with some apple juice
Snack: Don't think I had one
Lunch: Leftover Parmesan Lamb Pie minus the topping
Snack: Chocolate. It was just a small 1" by 1" by 1/4" piece. It was dark chocolate with ginger. Yumm.
Dinner: Ham and Potato Casserole. Tim's mom made it. It was very yummy. Green beans on the side too.
Dessert: Hot Cocoa after the games. It was freezing out! Well, not as bad as the week before. It had been pouring down rain during those games.
Thursday 30 (can't believe it!) April 2009:
Workout: Walking. And lots of driving. Which doesn't really count, I guess.
Breakfast: 1 serving fruit and 2 mini muffins
Snack: about 1/2 cup of trail mix. Maybe a little more. I didn't measure since I was in a hurry.
Lunch: Peanut butter and jelly sandwich and a juice box. Had to leave fast to get to my appointment.
Snack: Nothing.
Dinner: Chinese BBQ Pork and Mu Shu Pork. Yum. Very good food.
Dessert: Fortune Cookie.
Late Night Snack: Two mini muffins. My tummy was rumbling and it was distracting me from sleeping.
Ugh I got bad news at my doctors appointment. After my surgery, I will have to be on crutches for 1 whole month. So basically couch bound.
And with my whole internship and what not, I probably will have to postpone my surgery until next year, which means no skiing for me. Or if I do go skiing, only green and blue runs. No black (single or double) diamonds for me. Which really sucks because those are the only good ones.
I have been skiing since I was two years old and I love it. It was so hard to live without it this year. But I made it, sorta. My stress level is really too high, and skiing usually takes all my stress away.
Anyways. I've gotta start getting ready for class. I was lazy and didn't get out of bed till 8 this morning. I was going to get up at 6:30 when I woke up for no reason, but I fell back asleep and then Tim called me cuz he was already on his way to school.
Ok shower time!
